tis' the season for pumpkin deliciousness!


so those of you who follow me on instagram probably saw this photo-

and of course i had to share the goodness!

so here is what you are looking at- 
grilled chipotle chicken with roasted raspberry chipotle sauce
and pumpkin quinoa rice with parmesan cheese

and here is the fun part: 

raspberry chipotle sauce & quinoa found at costco, pumpkin & mrs. dash southwest chipotle found at most all grocery stores

pumpkin quinoa recipe:
2 cups dry quinoa
2 cups chicken stock
2 cups water
½ cup pumpkin puree
½ tsp table salt
¼ tsp nutmeg
¼ tsp cardamom
2 tbsp parmesan cheese
add all ingredients except Parmesan to a 4 qt saucepan and heat over medium heat.
cook until the grain absorbs all the moisture, stirring occasionally to prevent the dish from sticking to the bottom of the pan.
garnish with Parmesan cheese before serving.

the chicken is just grilled chicken breasts seasoned with mrs. dash's southwest chipotle seasoning (shown above)
and the ONLY place i have been able to find the roasted raspberry chipotle sauce is costco- if anyone finds it somewhere else definitely let me know! then again, i use it enough that a costco sized bottle works just dandy!

also, just a sidenote- i didn't have chicken stock- only chicken broth, and i was also missing cardamom which i substituted with ground cinnamon and it STILL turned out amazing! so i can only imagine what it would have tasted like with the flavor that the chicken stock and cardamom would have brought! 

i'm no betty crocker, but every once in a while i pull one of these dinners out of my hat
and husband reminds me of how much he loves me alll night long. 
i'll take it!
